Mole Sauce

INGREDIENTS 1 medium onion, diced 3 small cloves garlic, diced 5 dried ancho chilies, rehydrated and roughly chopped 2 corn tortillas, fried and broken into chips 4 teaspoons kosher salt 1/4 teaspoon pepper 1/2 teaspoon dried oregano 2 cups chicken stock 2 tablespoons almond butter 1 1/2 ounces Mexican chocolate

INSTRUCTIONS

Blend all ingredients except chocolate in a blender until smooth.

Pour mixture into saucier and place over medium-low heat. Add the chocolate and stir until melted and smooth.
